In reality, it is a batch of honey forced to "granulate", by thoroughly mixing in a seed stock of specially selected, previously granulated honey and mixing it over several days to properly disperse the honey crystals, so that they can multiply. Then it is stored in a cooler at optimum temperature while it cures. This product is 100% natural. The smooth texture of the seed stock leads to a nicely textured product that enhances the flavor.
